Ooops, kinda forgot I was supposed to be posting recipes huh?
Well, anyway, the recipe of the week is Brother and Sister Cookies!
You really do need two people for this, unless you're really daring. I'm sure you could do it!
Here goes!
Ingredients:
1 cup rolled oats
1/2 cup butter softened-unsalted, no oil added(I learned from experience, using oilonized butter in recipes usually makes cookies pancakes.)
1 cup packed brown sugar
1 tsp. baking soda
1/4 tsp. salt
2 6oz. cups plain or vanilla yogurt (Or 11/2 cups)
2 eggs
1tsp. vanilla
2 1/2 cups flour
11/2 cups semi sweet chocolate chips (Or whatever looks good to you)
1/2 cup raisins (optional)
1/2 cup walnuts (optional) (But really good)
Set oven to 375f. Spread rolled oats on an ungreased cookie sheet ina thin layer and put them in the oven for about 10 minutes, or until golden brown and smelling yummy.
While the oats are baking, melt your butter and pour it into a large mixing bowl.
Now take out your oats-if its been ten minutes of course-and pour them into a blender, blend until powdery. Leave the oven on.
Blend the butter on medium high with an electric mixer for 30 seconds-trust me! it makes the cookies really fluffy-while blending add brown sugar, baking soda and salt. KEEP BLENDING!
STILL BLENDING AREN'T YOU? Now add yogurt, eggs and vanilla, keep blending!
Add as much flour as possible while still blending then turn off the blender and add the oats and any remaining flour. Mix well with a spoon and then add the chocolate chips.
(This is why it's good to have two people, one can use the blender while the other adds the ingredients, it's usually best to let the littler kid blend while the older kid measures things out)
If you're using raisins, which I suggest it's super yummy, add them to a sauce pan and pour in enough water just to cover them. Cook them on medium heat until they start to smell strongly-like a good strongly not a burnt strongly-and the water turns purple, I think about 5-7 minutes.
Drain water, and add raisins to batter, also add the walnuts if you're using them. While you're doing all that, the little kid that's helping you can be greasing a large cookie sheet for you.
Now drop spoonfuls of batter about 2 inches apart on the cookie sheet and bake 9-11 minutes or until cookies are golden around the edges. Make 48-52 cookies according to what you consider a spoonful. =D Happy baking!
